Mexico's Legacy of Chocolate
A Deliciously Original Tour

DESCRIPTION:
Escape on an exciting and delicious tour of Mexico! Uncover the rich culture and natural history of Mexico, with a special focus on its culinary legacy and the role of chocolate within that legacy. Examine the ancient and modern Mexican culture in Mexico City, Puebla, and especially Oaxaca, and the influence of climate, elevation, flora, and fauna on agriculture, art, architecture, and ways of life. Experience the perennial spring of Oaxaca, one of Mexico’s leading art centers, as we tour its rich colonial history and its outstanding architectural beauty.
Throughout the tour, overnight in lovely accommodations and visit renowned and colorful restaurants. Explore the impressive archaeological sites of Teotihuacan, Monte Alban, and Mitla; and tour artisan workshops and traditional villages. In addition, visit the world-class Anthropological Museum in Mexico City, and art galleries in Oaxaca.
As a backdrop to this adventure, investigate Mexican cuisine, which extends to a diverse gastronomy—from moles to mezcal. Anyone who has read the book or seen the movie Like Water for Chocolate knows that Mexican cuisine can truly be an art form and is intertwined with its history. The varied cuisine of Mexico has evolved for 3,000 years and is built upon influences from the country’s indigenous groups, including Maya, Aztec, and Zapotec, and sprinkled with cooking styles from Spain, France, and Italy, to name a few. We visit authentic markets and trace the origins and use of chocolate in various Mexican dishes. A private visit and cooking demonstration including a chocolate tasting can be exclusively arranged at the Mexican School of Gastronomy in Mexico City.
CONSIDER:
This is a moderately active program in that there will be walking in old cities over somewhat uneven terrain, and natural areas. Typically, the weather is warm in Mexico, with cool nights, particularly in the mountains.
